Self-organized holidays risk booking through sometimes unknown companies and websites with no emergency contact persons. Alternatively, someone based in Europe can make all the ground arrangements and be on call for any enquiries, which is a great psychological boost when in a foreign country.
Organized tours can be either quiet or noisy to suit, and be chaperoned either at the meet and greet stage only or throughout, by arrangement. Although regular tours involving other travelers spread the cost and work out cheapest, custom-made tours may pan out better (at a cost!) for specific requirements including chosen routing, type of food, hotel and so on.
One definite advantage of an organised tour is that you can afford to be adventurous in the full knowledge that most possible pitfalls will be pointed out and avoided. There may also be a fall-back plan/a change of tactic possible sometimes!
Finally, organised tours can be tailor-made to suit different ages, tastes, family circumstances and budgets.
Personally I prefer a bit of a mix. For example, I sometimes go on a self-catering holiday including accommodation and flights, which permits me to be independent and adventurous otherwise. For a period of up to a fortnight, two or three centre self-catering holidays are also a personal favourite – as you can see such escapes verge into the territory of organised tours!
